Zucchini Salad recipe
This easy Zucchini Salad is a delicious dish to add to summer picnic and dinners. You only need a few ingredients to make this healthy green salad.
Ingredients
- 2 medium zucchinis (4 cups zoodles)
- 2 Tablespoons olive oil
- 1 Tablespoon red wine vinegar
- 1 cup halved cherry tomatoes
- 1 cup crumbled feta cheese
- salt and pepper, to taste
- 1 cup crumbled crispy bacon
Instructions
- Use a spiralizer to create noodles. Chop the longer noodles into smaller pieces.
- Whisk together the oil and vinegar and toss with the zucchini to coat.
- Stir in the tomatoes and cheese. Season the salad to taste with salt and pepper.
- Refrigerate the salad for at least one hour so that the flavors meld and the zucchini softens slightly.
- Right before serving stir in the crispy bacon.
