ALMOND SNOWBALL COOKIES RECIPE
Quick and easy almond flavoured snowball cookies make the perfect addition to your Christmas cookie tray!
Ingredients
- 1 3/4 cup (245g) all purpose flour
- 1/2 cup (50g) ground almonds
- 1/8 teaspoon salt
- 3/4 cup (170g) unsalted butter, softened
- 1/2 cup (65g) icing sugar
- 1/2 teaspoon (2.5mL) almond extract
- 1 cup powdered sugar
- Preheat the oven to 400 degrees F.
- In a medium bowl, stir together the flour, ground almonds and salt until combined. In a large bowl with an electric mixer, or in a stand mixer, cream the butter with the 1/2 cup powdered sugar and the almond extract until well combined. Add the dry ingredients and mix until combined.
- Form the dough into one tablespoon sized balls and place 2 inches apart on a baking sheet. Bake for 10-12 minutes or until lightly browned.
- Remove from the oven and immediately dredge the cookies in icing sugar, placing on a wire rack after to cool completely. Once the cookies have completely cooled, dredge them a second time in the icing sugar. Store in an airtight container at room temperature for 3-5 days, or freeze for up to 3 months.
